Monte waffle hearts
Whether for breakfast, as a snack in between or for dessert - one thing is clear: waffles are suitable for every occasion and taste good for the whole family.
Your waffles will be particularly delicious if you refine them with our creamy Monte. Decide for yourself whether you prefer light waffles with the Monte White/milk cream or dark waffles with the Monte Classic. For the perfect waffle, we recommend adding a bit of both the light and dark batter to the waffle iron. This creates a beautifully marbled look.

Dark Waffles
75 g Monte
40 g of brown sugar
70 g of butter
40 g bittersweet couverture
50 ml milk
80 g of flour
1 egg
Light waffles
75 g Monte White/milk cream
30 g of sugar
70 g of butter
40 g white couverture
50 ml milk
80 g of flour
1 egg

Preparation
The preparation is the same for the light and dark waffles.
Step 1
Melt the couverture together with the butter in a water bath over a saucepan. Separate the eggs and beat the egg whites in a bowl. In another bowl, whisk the egg yolks together with the brown sugar until fluffy. Then add the melted butter and couverture mixture to the egg yolk and sugar mixture and mix vigorously with a whisk.
Step 2
Now add the Monte and the milk and stir. Then add the flour and mix until the dough is smooth and free of lumps.
Step 3
Finally fold in the stiffly beaten egg white.
Step 4
Heat the waffle iron and brush with oil. Using a small ladle, pour the batter into the waffle iron and bake the waffles.
Tip
For marbled waffles or waffles with cow spots, put some of both batters in the waffle iron.
